Many European and American studies have shown all these years that the gap is widening between the food system and the public. Consumers and society today expect from food firms that they manage the ethical issue at its heart, which means several dimensions: Enhance or not one’s products’ social utility, respect or not vulnerable consumers, contribute or not to the people’s health, decrease or increase the social gradient, etc.
